Best Ever Sticky Dry-Rubbed Ribs

This recipe shines the spotlight on five spice powder, a mix traditionally used in Chinese cooking, which is made up of star anise, cloves, cinnamon, Sichuan pepper and fennel seeds. The blend gives these ribs their sweet fragrant flavour.  Click here for more recipes from Schwartz.

Method

  1. 1. Place all the ingredients for the ribs into a large mixing bowl and toss until completely combined. Allow to marinate in the fridge covered for at least 30 minutes.
  2. 2. In a small bowl, combine the ingredients for the spice mixture and set aside.
  3. 3. Fill a high sided frying pan with sunflower oil approx. 6-8 cm deep and heat until 190˚C/375F/Gas mark 5.
  4. 4. Add the ribs in small batches to cook for approximately 10 minutes or until cooked all the way through and golden brown. Drain on a large plate with kitchen paper. Repeat with the remaining ribs.
  5. 5. Heat a large frying pan over a high heat and add 1 tbsp of oil. Once hot and just about smoking, add the onions, chilli and garlic and stir fry for 1 minute. Add in the soy sauce and ribs and stir fry vigorously. Add in the spice mixture and toss through to combine completely. Serve immediately on a large platter.

3 garlic cloves, finely sliced

3 spring onions, roughly sliced

1 red chilli, sliced

1 tbsp dark soy sauce

Sunflower oil, for frying

For the ribs:

2lbs pork ribs, cut into 3″ pieces

1 tsp salt

1 tsp five spice powder

1 tbsp cornflour

2 tbsp plain flour

1 large free-range egg

1 tbsp rice wine

1 tbsp of sesame oil

For the spice mixture:

1 tbsp salt

1/2 tbsp sugar

1 tsp five spice powder

1 tsp white pepper

1kg pork ribs, cut into 8cm pieces

1 tsp salt

1 tsp 5 spice powder

2 tablespoon plain flour

1 large free-range egg

1 tbsp rice wine

1 tbsp of sesame oil

For the spice mixture:

1 tbsp salt

1/2 tbsp sugar

1 tsp 5 spice powder

1 tsp white pepper
