These pies, also called ‘Dingle pies’ are from Co. Kerry and are somewhat like the Cornish pasty. They could be bought in Dingle every August at the Puck Fair in Killorglin. For the Pastry:
900g self-raising flour
225g butter
110g lard or mutton dripping
1 heaped tsp salt
For the filling:
Pinch thyme
900g lean mutton
Salt and pepper
1 small onion, grated or finely chopped
2 tsp fresh mint, chopped, or 1 teaspoon dried milk, to glaze
