Healthy Recipe Roundup!

There is no avoiding the huge surge of interest in healthy eating throughout January and the first half of a new year.  As much as the attention probably should take prominence during most months I suppose coming after December, a month where people are expected to over indulge it comes at just the right time.  My theory on healthy eating and a healthy diet is to really keep it interesting, try new ingredients and of course to never deny yourself a big slice of chocolate cake every now and then!  So rather than trying to beat them, I’m joining the diet band wagon and have a roundup of my favourite healthy eating recipes!

Bootcamp Soup

Yup the name says it all- this soup is gonna kick your ass with all the nutrients you’re after!  This a surprisingly tasty soup, which is wonderfully cleansing. Used originally as part of a weight-loss diet, I make it regularly as a really substantial lunch. This recipe makes a generous amount – I freeze half the soup and keep the rest in the fridge.

Simple Mackerel Fillets with Chilli, Garlic and Lemon

Fish is a fantastically healthy ingredient and if you have been watching Channel 4’s latest food campaign, you will see that we need to be eating far more of the right kind.  Mackerel is a sustainable food resource and is found all around the coast of Ireland.  This is one of my favourite ways to cook it, it can really take strong flavours and actually benifits from them!

Balsamic Chicken with Avocado and Radish Salad

Avocado is one of the true underrated super foods-  It’s packed with essential fatty acids, Vitamin K and antioxidants- it also makes a lovely face mask! (But you didn’t hear that from me…) Radish’s are often linked to aiding digestive problems and are beneficial for the teeth and gum’s- So overall this salad is packed with nutrition and is a perfect Good Mood Food recipe!

Beetroot, Goats Cheese, Pine Nut and Rocket Salad

I don’t need to go on about how much I love beetroot!  It’s the perfect healthy eating and if you stick to the rule that healthy eating can be done be eating plently of colourful veg, well this ticks all the boxes!  Paired with pine nuts and goats cheese this make a great little starter dish!
