Lemon Drizzle Days…


For me there are three styles of cooking, the first and the quickest being the type of food I cook for myself to stave of the hunger pangs, the minute I come in the door, which takes minutes from kitchen to table.  I like that it’s instant and satisfying.  The second, slow cooking and entertaining, which takes a bit more preparation and thought, with some form of meat slowly bubbles away until it’s transformed into something tender and delicious.  While those two forms, have their merits, my favourite and truly satisfying form of cooking is baking.  I love that there is just something slightly more scientific about it, something a bit more black and white.



Even at my most tired, I have no problem heading into the kitchen, getting the oven all fired up, while I crack on weighing the ingredients and mixing batters.  To be completely honest, I am a messy cook, and I’m proud of it.  While I can admire beautiful and elegantly created French patisserie style baking, I would much prefer to create a big splodgy lopsided cake heaving with frosting.  These lemon drizzle slices are a perfect example of my favourite type of baking.  They are really easy to make, a sort of all in one recipe, and the extra hit of lemon zest really makes these little babies pop!
