Need Some Christmas Leftover Inspiration? Look No Further!

I hope you had a great Christmas!  We sure did!  I’m still stuffed after the Christmas dinner yesterday and at the moment I am writing this from bed while watching my favourite kids film, The Princess Bride.  Not sure Christmas gets any better than this really! 🙂

When it comes to leftovers there really isn’t many things better than a good old hang sangwich, but sometimes when inspiration is running thin on the ground, and you can’t face another bit of Turkey, it’s important to have some other little leftover recipe ideas up your sleeve.  We recorded a series of 15 second recipes for RTÉ’s FourLive using up festive leftovers a few weeks ago and so for the day that’s in it, I think it’s probably the right time to share them.

Christmas Cheesecake

Just in case you haven’t had enough Christmas flavours already, this Christmas cheesecake uses up the last of the Christmas cake as a base for a delicious spiced Cheesecake.  Sprinkle with shaving of dark chocolate for the most amazing rich Christmas dessert!

Leftover Blue Cheese Soufflés

Leftover cheese from the Christmas cheeseboard?  These Cheese Soufflés are the best way to give those scraps a second life.  I know, I know soufflés don’t exactly scream easy cooking, but they do make use of ingredients that you will most likely have in your kitchen.  Give them a go, they are highly impressive all puffed up and warm out of the oven.

Leftover Christmas Pudding Caramel Pots

We only got through half our Christmas pudding last night so we definitely be making some of these delicious Pudding Caramel pots today!  Try and get some really good quality ice cream, it makes all the difference, and if you can’t get a tin of caramel, remember that you can boil a can of evaporated milk constantly covered with water for 2 hours until you are left with a rich golden caramel sauce.  Failing that you could also make a caramel sauce with sugar, butter and milk.  Really the options are endless! 🙂

Leftover Cranberry and White Chocolate Muffins

I can’t stop talking about these amazing muffins!  They are so delicious and just the perfect balance of flavours between the white chocolate and tart cranberries!  All I can say now is you just have to try them!

Leftover Turkey and Sweetcorn Soup

Last but not least is a twist on my favourite Chicken and Sweetcorn soup, simply replacing the chicken for last of your leftover turkey.  It’s a really aromatic soup which is perfect for cuing any woes the Christmas season may throw your way.
