Breakfast Granola

Granola is such a handy thing to have in the cupboard as it’s a quick, nutritious and most importantly delicious breakfast that you can have ready in a matter of seconds. This recipe uses apricots, mango and raisins but you can add in your favourite fruits, nuts and seeds. Serve it with fruit and yoghurt and you’ll be set up for the day!

Method

  1. 1. Preheat the oven to 180°C/350°F/Gas Mark 4. Chop and prepare the dried fruit and nuts so that everything is of similar size.
  2. 2. Combine all your dry ingredients in a large mixing bowl, then drizzle over the maple syrup and mix through. Empty the contents onto a large baking tray and spread out evenly. Toast in the oven for approximately 20 minutes at 180°C, but keep an eye on it as ovens vary – you are looking for the oats to just turn a light golden brown.
  3. TOP TIP

    Give them a mix halfway through the cooking time if you think it's browning too quickly.
  4. 4. Remove from the oven and leave to cool completely. Transfer to an airtight container. The granola should last up to two weeks, if you don’t eat it all before then!

50g pumpkin seeds

5 tbsp maple syrup

1⁄4 tsp salt

150g raisins

100g dried apricots

100g dried mango
