Caramelised Onion & Mushroom Cheese Toastie

For a little indulgence and comfort, this Caramelised Onion & Mushroom Cheese Toastie is so ridiculously good I would nearly serve it for a light supper with some sharply dressed salad leaves and call it a day.

Method

  1. 1. Heat a generous knob of butter in a pan over a medium heat and slowly fry the onions for about 35 minutes or until golden and sticky. Season with salt. When caramelized, put aside for filling.
  2. 2. Heat the pan again over medium-high heat and add a little oil. Add the mushrooms and fry for 4 minutes or until they start to brown on one side. Turn and continue to cook the mushrooms until they are tender, before stirring in a knob of butter and the thyme. Stir the mushrooms until coated in the butter and thyme before setting aside to cool.
  3. 3. For the toastie, heat a griddle pan or frying pan on a low to medium heat.
  4. 4. Slice the loaf into 4 thick slices and spread the butter on both sides. (For an irresistibly golden finish slather the outside pieces with mayonnaise).
  5. 5. Grate the gruyere and cheddar cheese on the large side of a box grater, toss together.
  6. 6. Top half of the slices with grated cheese, caramelised onions and mushrooms. Top with the other slice of bread and press down.
  7. 7. Put them on the grill pan and cook for 4 minutes on either side. Serve immediately.
