Cocktail Meatballs

I’ve made these for as long as I can remember, so simple and fun! It’s meatballs covered in a rich sweet & sticky sauce and they always go down a treat while entertaining.

Method
  1. Preheat the grill to high.
  2. In a large bowl, combine the minced beef, onion, green pepper, breadcrumbs, egg and Tabasco sauce until thoroughly mixed together.
  3. Form the mixture into bite-sized meatballs, each about 3cm (1/4 in) in diameter. Arrange the meatballs on a grill tray and place under the hot grill for 10-12 minutes, turn from time to time, until browned all over.
  4. To make the sauce, melt the butter in a saucepan over a medium-high heat, add the onion and pepper and sauté until soft. Add the remaining ingredients and bring to the boil, then reduce the heat and simmer gently for 5 minutes.
  5. Arrange the meatballs on a serving platter and cover with the sauce, then pass around and enjoy.

a dash of tabasco sauce

1/2 tsp salt

1¼ oz butter

2 tbsp soft dark brown sugar

1 tbsp white wine vinegar

1 tbsp worcestershire sauce

1 tsp english mustard

450 g beef mince

4 tbsp fresh white breadcrumbs

1 large egg, beaten

a dash of tabasco sauce

1/2 tsp salt

30 g butter

1/2 large onion, peeled and finely chopped

1/2 green pepper, finely chopped

340 g tin condensed tomato soup

2 tbsp soft dark brown sugar

1 tbsp white wine vinegar

1 tbsp worcestershire sauce

1 tsp english mustard

There are few recipes that can boast being made almost entirely of store cupboard ingredients but this one comes close. Bar a few mint leaves, some yoghurt and sausage meat, the rest of the required items can happily lie in wait for their moment to shine. If you choose not to use sausage meat here, a combination of pork and beef mince, or lamb will be worthy fit.

Rich Tomato Italian Meatballs With Linguine

If I was to name one recipe that is ideal food therapy, it would be this rich tomato & Italian meatballs pasta. There is something extremely relaxing about rolling the meat into little balls and plopping them into a boiling, rich, tomato sauce. I rely solely on the heat of the sauce to cook and infuse the balls with flavour and I love to serve the dish on a big platter with serving spoons, so that people can dig in at the table.

Swedish Meatballs

These have been made world-famous by IKEA, where they serve them in the food hall, however unless you have tried the homemade version, I personally think you haven’t properly tasted this traditional Swedish dish. I have to admit I was a little put off when I was first served them with a big dollop of jam on the side, but I was quickly converted and now I’m convinced these meatballs have to be served with lingonberry sylt (lingonberry jam) in order to be truly authentic.
