Crunchy Cucumber Spiralizer Salad

February 14

I have a confession to make- I am a kitchen gadget addict and worse than that I buy other people kitchen gadgets that I secretly want for myself!  A perfect example of this is the spiralizer I bought my mom for Christmas which has now made its way into my kitchen! It’s a fun little gadget which turns vegetables into interesting shapes & textures. I recently used it to make a really fresh cucumber carrot and mint salad with toasted peanuts and a sweet and spicy dressing. If you don’t have a spiralizer you can just as easily make this salad by slicing the vegetables thinly.

  • serves Serves 4
  • time 30 mins

  1. 1. For the dressing, whisk together the caster sugar with the zest and juice of the lime and fish sauce until the caster sugar has dissolved. Add in the red chilli and whisk through. Toast the peanuts in a dry frying pan until golden and then remove from the pan and bash roughly in a pestle and mortar.
  2. 2. Attach one carrot to the machine and twist that handle! Do the exactly same with the cucumber and you should be left with long vegetable noodles. Put all the vegetables in a large mixing bowl and add in some finely sliced shallots, finely sliced red chilli and a handful of bean sprouts and some fresh mint leaves. Pour over the dressing and give it a good toss to combine.
  3. 3. Serve it up with some more mint leaves, peanuts and a little chilli for extra spice and colour!
