Everything Bagel

The everything bagel is “everything” right now in LA. It’s basically a plain bagel sprinkled with a savoury combination of spices and seeds. Serve them with smoked salmon and dill cream cheese for a brunch option with a difference.

Method

  1. 1. Place the flour and salt in a large bowl. In a jug mix together the water, yeast and sugar and allow to sit for 6-8 minutes or until it becomes frothy. Make a well in the centre of the flour and pour in.
  2. 2. Turn the dough onto a lightly floured surface and knead for 10 mins until the dough feels smooth and elastic. Shape into a ball and put in a clean, lightly oiled bowl. Cover loosely with cling film and leave in a warm place until doubled in size, about 1 hour.
  3. 3. Meanwhile mix together all the ingredients for the everything spice mix in a small bowl.
  4. 4. Preheat the oven to 200˚C/400˚F/ Gas Mark 6 . Divide the dough into 10 even sized balls and poke your finger though the middle of each of them to form the bagel shape.
  5. 5. Place on a tray lined with parchment paper and set aside for 5 minutes. Put a large pot of water on to simmer and put the bagels into the water in batches, cook for 1 minute on each side turning with a slotted spoon.
  6. 6. Place on a tray lined with parchment paper, brush with a little beaten egg and sprinkle over the everything spice mix. Bake in the oven for 20 minutes until golden. Remove from the oven and allow to cool completely on a wire rack.

500g strong white flour

350ml lukewarm water

1 sachet of active dried yeast

2 tbsp of sugar

2 tsp of salt

1 beaten egg

Everything Bagel spice mix:

1 tbsp poppy seeds

1 tsp caraway seeds

1 tbsp sesame seeds

1 tsp salt

1 tsp garlic powder

1 tsp dried onion

To serve:

300g smoked salmon slices

150g cream cheese

Small handful dill
