Fancy Funeral Sandwich Triangles

Easy to make, transport and serve, and with fillings interchangeable, you can keep everyone happy.

Method

  1. 1. For the celeriac remoulade, place the celeriac into a bowl with the lemon juice. Toss to combine and season with a little salt.
  2. 2. Add the mayonnaise, Greek yoghurt, Dijon mustard and chopped herbs and stir to combine. Check for seasoning and add more salt, black pepper or lemon juice to taste.
  3. 3. For the herby cream cheese, place the cream cheese in a bowl and add the spring onions, jalapeno, lemon juice and zest and chopped herbs and stir to combine. Season with salt and pepper to taste.
  4. 4. To assemble your sandwiches, butter all of your bread slices and lay 6 of them out on a board.
  5. 5. Spread 3 of them with a little Dijon mustard and spread 3 of them with herby cream cheese. Add the celeriac remoulade to the slices that have Dijon mustard on and then top with the ham and a second slice of bread. Cut into triangles and place onto a tray.
  6. 6. Add cucumber slices to the cream cheese covered bread slices and then top with a second slice of bread. Cut into triangles and place on the tray with the other sandwiches. Serve with the crisps.

Ingredients

For the ham and celeriac sandwiches:

½  head of celeriac, peeled and julienned

Juice of ½ a lemon

2.5oz mayonnaise

1.7oz greek yoghurt

2 tsp Dijon mustard, plus extra for spreading

1 tbsp chives, finely chopped

1 tbsp flat-leaf parsley, finely chopped

10 slices good quality ham

Sea salt and freshly ground black pepper

For the herb cream cheese and cucumber sandwiches:

7oz full fat cream cheese

2 spring onions, very finely chopped

1 jalapeño chilli, very finely chopped

Zest and juice of ½ a lemon

2 tbsp chives, dill & flat-leaf parsley, finely chopped

¼ cucumber, finely sliced

Sea salt and freshly ground black pepper

To serve:

12 slices white batch loaf

Softened butter, for spreading

200g full fat cream cheese

Sea salt and freshly ground black pepper

To serve:
