A cheese fondue is one of those meals that instantly evokes all things kitsch and retro. A throwback to a style of eating made popular in the 60’s and 70’s it’s a bit of fun and makes for a great sharing meal amongst friends. This version uses Irish cheese and cider and is particularly delicious on cold winter nights
For the fondue:
3.3fl oz Irish cider
9oz Irish cheddar, grated
9oz St Gall cheese, grated
1 ½ tbsp corn flour
1 garlic clove, finely grated
1 tbsp apple cider vinegar
A good glug calvados
Nutmeg, grated
Black pepper
Thyme leaves picked and finely chopped
To serve:
Sourdough bread
Boiled baby potatoes
Apple slices
Selection of Irish charcuterie
