Prawn Pil Pil Pasta

Sweet prawns in a slick of spiced garlic oil is the perfect addition to freshly cooked pasta. Add slices of sourdough toast and serve in deep bowls for instant comfort.

Method

  1. 1. Bring a large pot of salted water to the boil and cook the pasta for 12-14 minutes until al dente.
  2. 2. Meanwhile, heat the oil in a pan over a medium heat and gently fry the garlic with the spices. Add the prawns and increase the heat and fry until they are pink all over. Season well with sea salt and freshly ground black pepper.
  3. 3. Drain the pasta, saving a splash of cooking water, tip the pasta and saved water into the pan with the prawns. Toss well and serve scattered with parsley.

350g linguineĀ 

125ml extra virgin olive oil

3 fat cloves of garlic, finely sliced

1 tsp smoked sweet paprika

Generous pinch of chilli flakesĀ 

800g raw king prawns, roughly choppedĀ 

Handful of flat leaf parsley, finely chopped
