800g braising steak (beef shin or cheek is especially delicious), cut into large pieces
1 tbsp plain flour
1 onion, finely chopped
2 medium carrots, finely chopped
1 celery stick, finely chopped
1 large garlic clove, thinly sliced
1 bay leaves
3 thyme sprigs
150ml white wine
1 x 400g tin chopped tomatoes
2 tbsp tomato purée
100ml full-fat milk
200g dried pappardelle
