This butter chicken is truly one-pot and couldn’t be easier! Throw all the ingredients into the slow cooker, set it and forget about it. It’s that simple! The results are juicy chicken and a rich, flavoursome curry that’s just as good as any restaurant. Tip: If you want more flavour, sautee your onions and spices together with some butter in a pan before you put them in the slow cooker.
8 skinless chicken thighs
25g butter
500g potatoes, peeled and halved
1 onion, finely chopped
1 large thumb sized piece of ginger, finely grated
3 garlic cloves, crushed
1 tbsp garam masala
1 tsp cumin
2 tsp ground coriander
4 green cardamom pods, crushed
750ml tomato passata
1 x 400g tin coconut milk
