The char siu marinade for this recipe is really versatile – try it with any type of meat or use it to glaze vegetables cooked on a hot griddle pan.
2.2lbs chicken drumsticks
6 spring onions, finely sliced
3 tbsp sesame seeds, toasted
For the marinade:
1 tbsp dark brown sugar
3 tbsp hoisin sauce
2 tbsp ketchup
2 tbsp honey
1 tbsp rice wine
1 tsp five spice powder
½ tsp white pepper
1 tsp sesame oil
3 garlic cloves, finely grated

Make this spice mix in larger amounts and store it in a jar and you’ll never be too far away from a fresh, sizzling plate of chicken wings.
