Sticky Coca Cola Ribs

If you’ve tried cooking your Christmas ham in cola you’ll know the sweet caramel spice is an unusually brilliant combination with pork. Replace rice wine with any vinegar you have to hand and fish sauce can easily be swapped for soy sauce.

Method

  1. 1. Add the 1.15litres/5cups cola to a large saucepan. Add the ribs and bring to the boil along with the star anise, black pepper and cloves. Allow to simmer for 1hr 15 minutes or until tender.
  2. 2. Heat the oil in a small saucepan over a medium heat, add garlic, ginger and shallot. Sauté for 8 minutes or until softened. Then stir through the dark brown sugar followed by the rice wine, fish sauce, ketchup and remaining cola. Allow to simmer for 15 minutes or until reduced and sticky. Season to taste and blend until smoothie you want a super smooth sauce.
  3. 3. Once the ribs have cooked, place onto a roasting tray lined with parchment paper. Slather them in the sauce on both sides and bake in the oven at 220˚C for 15 minutes until slightly caramlised. Slice and serve with some coleslaw.

 2lb pork ribs 

3 star anise 

1 tsp black peppercorns 

1 tsp whole cloves 

2 tbsp sunflower oil 

6 cloves garlic, crushed 

2inches piece ginger, finely grated

2 banana shallots, finely chopped 

2 tbsp dark brown sugar 

1 tbsp rice wine

1 tbsp fish sauce

4 tbsp tomato ketchup 

Sea salt 

1.5 litres coca cola 

 2 x 500g pork ribs 

3 star anise 

1 tsp black peppercorns 

1 tsp whole cloves 

2 tbsp sunflower oil 

6 cloves garlic, crushed 

5cm piece ginger, finely grated

2 banana shallots, finely chopped 

2 tbsp dark brown sugar 

1 tbsp rice wine

1 tbsp fish sauce

4 tbsp tomato ketchup
