Sweet Potato Fries

Sweet potato fries or chips are one of my all time favourite comfort foods. They are much better for you than traditional chips especially as they are roasted and not fried. I like to toss them in some cajun seasoning and add a few thyme leaves for extra flavour before roasting in the oven but they are just as tasty with simple salt & pepper.

Method

  1. 1. Preheat the oven to 210°C/410°F/Gas Mark 6
  2. 2. Wash and prepare your sweet potatoes by chopping into thin or chunky chips. You can have skinny fires or thick cut depending on how you like them.
  3. 3. Toss the sweet potato chips in a large roasting tin, with the rapeseed oil and cajun seasoning.
  4. 4. Pop the roasting tin in the oven for 35-40 mins making sure to toss them half way through, until they are slightly charred on the edges.

1 tbsp of rapeseed oil

2 tsp of cajun seasoning

a few thyme sprigs (optional)
