Tajin is a Mexican pantry staple and provides heat and acidity and gives the tongue a tickling hit. Track it down online or in specialty food stores. This salad would be a lovely side dish to a bbq
1 red onion, thinly sliced on a mandoline
1 watermelon, peeled and cut into half moons
3.5oz pineapple, finely diced
½ cucumber, de-seeded and finely diced
1 red chilli, finely diced
Sea salt and freshly ground black pepper
For the dressing:
4 tbsp olive oil
1 tbsp honey
Juice of a lime
2 tbsp rice wine vinegar
To serve:
handful pumpkin seeds, toasted
1 tbsp sesame seeds, toasted
