White Chocolate and Raspberry Bread & Butter Pudding

Paid Partnership with Thomas’ – Ding dong merrily on high! Who needs a quick, easy but totally decadent Christmas breakfast recipe? This is next level bread pudding made with Thomas’ sweet Banana English Muffins, white chocolate and raspberries- sweet, indulgent and something you can serve directly to the table for everyone to dig in on Christmas morning!

Method

  1. 1. Whisk 150g of the sugar and eggs together with the vanilla, gradually whisk in the cream until well combined.
  2. 2. Arrange the muffins in a medium sized ovenproof dish and then layer with the raspberries, jam and white chocolate between the slices. Pour over the cream mixture. Leave to stand for at least 30 minutes. sprinkle evenly with the remaining 25g sugar.
  3. 3. Preheat the oven to 160°C/325°F/Gas mark 3.
  4. 4. Place in the oven to bake for 45 minutes until golden.

6 x Thomas Banana English Muffins, halved

1 cup caster sugar

3 free range eggs

1 vanilla pod, seeds removed

2 & 1/4 cups double cream

1 cup frozen raspberries

4 tbsp raspberry conserve

2/3 cups white chocolate, sliced

Icing sugar, for dusting

6 x Thomas Banana English Muffins, halved

175g caster sugar

3 free range eggs

1 vanilla pod, seeds removed

500ml double cream

125g frozen raspberries

4 tbsp raspberry conserve

100g white chocolate, sliced

Icing sugar, for dusting
