Some Summer BBQ Recipes!

I shot this little summer BBQ spread back in April for the Irish Independent, back when we had that lovely stretch of sunshine.  I’m in NYC for another day or two but got a text from a friend in Dublin telling me not to come home because the weather is so bad over there.  Well I hope it picks up because I have lots of BBQ inspired recipes to try out and hopefully these recipes might get you out grilling rain or shine!

The Irish weather has never really given us Irish the opportunity to perfect our summer BBQ recipes.  By the time we’ve decided it’s worth taking the BBQ out, big dirty rain clouds tend to make their presence known and everyone has to retreat back indoors.  When we do finally get into BBQ mode it’s good to have some really reliable and delicious recipes up your sleeve.

My BBQ Jerk chicken packs a punch with lots of interesting spicy, fresh yet earthy flavours which are all perfectly complimented by the zingy mango salsa which is an essential element of this dish.  Everyone loves a good American burger but why not show off our Irish beef with a bit of an Irish twist.  I serve mine on wholemeal soda bread baps with a good Irish blue cheese like Cashel, Bellingham or Boyne Valley.  If we do get the sunshine this summer, these recipes will make your days even brighter!
