Animal Style Fries

Animal style has been one of the most popular secret menu options at In n Out Burger for many years! Perfectly cooked fries topped with loads of melted cheese, grilled onions and a huge dollop of a thousand island style sauce is junk food at it’s best! Here is my attempt to recreate this classic.

Method

  1. 1. Bring a large pot of water to the boil over a high heat and add salt.
  2. 2. Thinly slice the potatoes into chips and gently drop in the water. Bring the temperature back to the boil, this takes approximately 3 minutes and in this time the chips will have cooked. Remove from the water and place on a tray with paper to dry, sit in fridge for 10mins or they can also be frozen at this point. Add enough oil to fill a large pot one third full. Bring the temperature of the oil to 130c. Place the chips in the oil and fry for 3mins, remove and place on a tray with paper to dry, sit in fridge for 10mins or freeze.
  3. 3. Meanwhile, heat the sunflower oil and butter in a small pan over a low heat. Add the onions and a little salt and fry for 5-6 minutes until softened and golden.
  4. 4. Finally, heat the fryer to 200c. Place the chips in the oil and fry until golden brown.
  5. 5. Combine the mayonnaise, ketchup, mustard and relish in a bowl, season to taste. Once the chips have cooked serve in baskets immediately, top each portion with 4 slices of cheese followed by onions and a generous dollop of sauce.

1kg or 4 large potatoes, peeled 

2 large onions, chopped 

1 tbsp sunflower oil 

1 tbsp butter 

Vegetable oil, for frying

To serve: 

3.5oz Mayonnaise 

1oz Ketchup 

1 tsp mustard 

4tbsp Cucumber relish 

8 American cheese slices 

Sea salt and freshly ground black pepper

100g Mayonnaise 

25g Ketchup 

1 tsp mustard 

4tbsp Cucumber relish
