Cauliflower Mac ’n’ Cheese

Cauliflower Mac and Cheese can be made with any short pasta you like and ingredients like frozen peas or steamed baby broccoli can be added, too.

Method

  1. 1. Put the milk and macaroni into a shallow casserole pan over a high heat and season well with salt and pepper.
  2. 2. Bring to the boil then reduce to a simmering temperature and cook for 10 minutes, stirring frequently.
  3. 3. Add the cauliflower and cook for a further 3–5 minutes until both the cauliflower and pasta are tender and the sauce is thickened and reduced, coating the pasta.
  4. 4. Add the butter, cheeses and mustard and cook, stirring, over a low heat until the cheese has melted. Meanwhile, preheat the grill to a high setting.
  5. 5. Put the casserole under the hot grill to brown on top and serve straight away.

47fl oz full-fat milk

12oz macaroni

1 head of cauliflower, broken into small florets

1/4 stick unsalted butter

5oz mature Cheddar, grated

4.5oz grated mozzarella

2 tsp Dijon mustard

Sea salt and freshly ground black pepper

1.4 litres full-fat milk

350g macaroni

1 head of cauliflower, broken into small florets

25g unsalted butter

150g mature Cheddar, grated

125g grated mozzarella

2 tsp Dijon mustard

Sea salt and freshly ground black pepper
