Cowboy beans on toast

This is dish makes an ideal brunch option but also as dinner! This sausage and bean sauce doesn’t require you to be chained to the hob, it’s quick and easy. Make sure you get good quality sausage meat for this as well as streaky bacon, if you can’t find sausage meat use good quality sausages and simply remove the meat from the casing. To add some heat, add a little chilli powder along with the smoked paprika at the start.

Method

  1. 1. Heat one tablespoon of the oil in a large sauté pan over a low heat. Add the onion and sauté
    for 4-5 minutes until softened, stirring occasionally.
  2. 2. Increase the heat to medium/high and add the garlic and bacon and fry until golden. Tip the sausage meat into the pan, breaking up with a wooden spoon to give you small pieces.
  3. 3. Fry for another 5 minutes or until the sausage has picked up some colour and is golden.
  4. 4. preheat grill to high.
  5. 5. Stir through the smoked paprika and brown sugar to coat the meat. Add the Worcestershire
    sauce and passata and simmer for 15-20 minutes until slightly thickened.
  6. 6. Stir through the mixed beans and roughly tear the kale into the pan, allow to simmer for another 2-3 minutes until the beans have heated through and kale is wilted. Season with a little salt and fresh ground black pepper.
  7. 7. While the beans are cooking through, place the bread on a baking tray and then under a hot
    grill for 30 seconds each side until golden. Top with the beans and mozzarella and place back
    under the grill until golden and bubbling.
  8. 8. Sprinkle over a little black pepper and serve.

1 tbsp sunflower oil

1 onion, finely chopped

2 garlic cloves, minced

4 slices streaky bacon, diced

½ lbs sausage meat

1 tsp smoked paprika

1 tsp dark brown sugar

1 tbsp worcestershire sauce

2 cups passata

1 x 14oz tin mixed beans, drained and rinsed

2 cups kale, hard stalks removed

4 slices Rustik oven hearty grains/seeds

1/2 cup grated mozzarella

Sea salt and freshly ground black pepper

1 tbsp sunflower oil

1 tbsp worcestershire sauce

500ml passata

1 x 400g tin mixed beans, drained and rinsed

100g kale, hard stalks removed

4 slices Rustik oven hearty grains/seeds

50g grated mozzarella

Sea salt and freshly ground black pepper
