Epic Breakfast Bun with Velvet Cheddar Scrambled Eggs, Avocado & Maple Black Pepper Bacon

Start your day off right with a true breakfast for kings! All of these great ingredients sandwiched between soft pillowy buns make for that perfect breakfast bite.

Method

  1. 1. Preheat the oven to 220°c/Fan 200°c/430°f.
  2. 2. Put the slices of bacon on a baking sheet, drizzle with the oil, brush with the maple syrup and scatter with pepper and cook for 12 minutes, turning once, until crispy and sticky.
  3. 3. Add the eggs & cream in a bowl with some seasoning and gently whisk until smooth.
  4. 4. Melt the butter in a non-stick pan and add the eggs & cream mix. Stir gently, until they are just scrambled. Turn off the heat and add in your cheese.
  5. 5. Spread the buns with butter and lightly toast on another pan.
  6. 6. Assemble the buns with a good dollop of egg, bacon, slices of avocado and enjoy!

Ingredients

12 slices streaky smoked bacon

1 tsp olive oil

2 tsp maple syrup

Good grinding of fresh black pepper

6 free range eggs, whisked

2 tsp double cream

¼ stick unsalted butter, plus extra to spread

⅓ cup cheddar cheese, grated

4 Arnold, Oroweat, Brownberry Sweet Multigrain buns

1 large avocado, sliced

Sea salt and freshly ground black pepper
