Family Taco Feast

This recipe is a feast! It is guaranteed to bring everyone around the dinner table and guaranteed to leave everyone with full, happy tummies! This dish features in my latest TV Show, Donal’s Family Food in Minutes and airs weekly on Wednesdays at 8.30pm on RTE 1 from 21st October.

  1. 1. In a dish, mix the garlic, half the lime zest and spices. Finely chop half the coriander and stir into the dish then season well. Add the steaks to the green marinade and sit whilst you make the gauc and salsa, turning occasionally.
  2. 2. In a small bowl, mix the red onion with the rest of the lime juice and some sea salt and set aside.
  3. 3. Make the guacamole, in a food processor blitz the chilli, coriander leaves, garlic and spring onions until as smooth as possible. Add the avocado and lime juice and blitz until super smooth. Season to taste.
  4. 4. Heat a griddle pan over a high heat until smoking. Remove the steaks from the marinade, pat dry and drizzle with oil then sear for 1-2 minutes each side until charred but still rare inside. Set aside to rest for 5 minutes.
  5. 5. Toss the tomatoes with the red onion and the rest of the coriander leaves.
  6. 6. Slice the steak and serve in the warm tortillas with the tomato and red onion relish and the taco shop guacamole.

2 cloves garlic, grated

2tbsp olive oil

Juice of a lime

2tsp ground cumin 

½ tsp hot chilli powder

Large handful fresh coriander

1 red onion, very finely sliced

Drizzle extra virgin olive oil 

600g sirloin steak

4 medium vine ripe tomatoes, finely chopped

8 corn tortillas, warmed

For the taco shop guac:

1 fresh serrano or jalapeno green chilli, deseeded and roughly chopped

Large handful coriander leaves 

1 fat clove garlic, bashed

4 spring onions, white parts only 

2 large avocados, pitted and peeled

Juice of a lime
