Ham & Gruyere French Toast

Basically a cheese toastie, taken up a notch, dipped in beaten egg and fried until gloriously golden brown. You may want to schedule the Christmas walk in for after this one!

Method

  1. 1. Preheat the oven to 200°C/180°C fan/400°F/Gas Mark 6.
  2. 2. Blend the eggs, cream and salt in a wide shallow dish. Place 4 of the slices of bread into the egg mixture and spread the top sides with the dijon mustard.
  3. 3. Melt ½ the butter in a large skillet and transfer the 4 slices of bread, egg side down, into the foamy butter. If your pan is smaller do 2 slices at a time.
  4. 4. Top with a slice of ham and cheese on each. Soak one side of the remaining untouched bread in the eggy mixture then place them, egg side up, on top of the cheese to create the sandwich.
  5. 5. Cook for 2 minutes then flip, add in the rest of the butter, and allow to cook for a minute more, before transferring to the oven for 5-6 minutes until the cheese is gloriously melted. Serve cut in half with cranberry relish or spicy tomato chutney.

4 large free range eggs, beaten

3 tbsp double cream

Good pinch of sea salt

8 slices white bread, ideally sliced from a loaf

4 tsp dijon mustard

1/2 stick unsalted butter

4 slices of thick cut smoked ham

4.5oz sliced gruyere cheese

Cranberry relish or spicy tomato chutney, to serve
