These little cupcakes might look innocent but they are laced with good Irish whiskey! A perfect St. Patrick’s day sweet treat for grown ups!
Makes 12 cupcakes
For the cupcakes:
1 1/2 cups self raising flour
3/4 cup caster sugar
1tbsp instant espresso powder, plus extra for dusting
1tsp baking powder
1 1/4 sticks butter, in cubes, softened
2 large free-range eggs
1/4 cup milk
2 tbsp Irish whiskey
1 tsp vanilla extract
For the butter cream frosting:
1 1/2 sticks butter, softened
1 1/2 cups icing sugar
1 tbsp Irish whiskey
1 tsp espresso powder
To decorate:
Mocha chocolate coffee beans (in shape of coffee bean)
