Roast Shallots & Carrots with Cumin Seeds

A really simple way to make your Christmas carrots a little more interesting. The sweetness of the mushy roasted shallots combined with cumin and fennel seeds bring to life the sweet honey coated carrots.

Method
  1. Preheat the oven to 180°C/350°F/Gas Mark 5.
  2. Scatter the carrots and shallots into a roasting tray, drizzle with olive oil. Sprinkle with cumin and fennel seeds and roast in the oven for 25-30 minutes until the carrots are golden, tender and shallot skins are charred. Remove the shallots from the skins by squeezing out their flesh, return to the tray and toss with the carrots.
  3. Drizzle with honey, season and place back in the oven for another 5-10 minutes until golden and sticky.
