Spaghetti Al Pomodoro

Tomatoes and pasta, need I say more. A match made in heaven, that also just so happens to make the perfect quick fix supper.

Method
  1. Bring a large pot of water to a rolling boil, season generously with salt and add the spaghetti, cooking until al dente.
  2. Add the olive oil and garlic to a large frying pan and place over a medium heat. When the garlic begins to go golden, add the chilli flakes and tomatoes. Continue to cook until the tomatoes reduce and soften slightly. Season to taste.
  3. Using a tongs, drain the spaghetti directly to the tomato sauce and toss until completely combined.
  4. Remove from the heat and mix through the cheese and basil leaves.
  5. Serve straight away in warm bowls.

1lb spaghetti or bucatini

5 tbsp extra virgin olive oil

3 cloves garlic, thinly sliced

1 tsp red chilli flakes

4 cups cherry tomatoes

A good handful of basil, leaves torn

handful Pecorino cheese, grated

500g spaghetti or bucatini
