Steak with Crying Tiger Sauce and Sesame Baby Gem Salad

Grilled steak, spiky thai inspired dipping sauce and a fresh crunchy salad, a simple but really impressive supper that takes minutes to prepare. You can make your own toasted rice powder which is as straightforward as it sounds. Simply roast a handful of sticky or other short grain rice or toast in a pan and then grind to a powder. It can also be left out if needed.

Method

  1. 1. Marinate the steak in the oyster sauce, soy sauce and sesame oil whilst you prepare the rest of the recipe.
  2. 2. Blend all the ingredients for the sauce together and put into a dipping bowl.
  3. 3. Add the baby gem wedges with the sesame oil, rice vinegar, spring onions, herbs and sesame seeds to a bowl and toss.
  4. 4. Heat a griddle pan or heavy based frying pan over a high heat where it starts to smoke. Sear and cook for 2-3 minutes on each side. Allow to rest for 5 minutes before slicing. Serve with the salad and the dipping sauce.

Ingredients

For the steak:

2 x 1/2 lb tri tip sirloin or rib eye steaks 

2 tbsp oyster sauce

1 tbsp soy sauce 

1 tbsp sesame oil

For the dipping sauce:

Juice of 2 limes

1 tbsp soft brown sugar

2 tbsp fish sauce

1 tsp chilli flakes 

1 tbsp coriander stalks, finely chopped

4 spring onions, washed and sliced

1 tbsp ground toasted rice powder

For the salad:

2 baby gem, each cut into 6 wedges

1 tbsp sesame oil

2 tsp rice vinegar

4 spring onions, washed and sliced

Large handful of coriander leaves

Small handful of mint leaves 

1 tbsp toasted sesame seeds

For the steak:

2 x 250g tri tip sirloin or rib eye steaks 

2 tbsp oyster sauce

1 tbsp soy sauce 

1 tbsp sesame oil

For the dipping sauce:

Juice of 2 limes

1 tbsp soft brown sugar

2 tbsp fish sauce

1 tsp chilli flakes 

1 tbsp coriander stalks, finely chopped

4 spring onions, washed and sliced

1 tbsp ground toasted rice powder

For the salad:
