Cheese, crispy bacon, pickled onion, spicy mayo… a good burger with all the trimmings really is hard to beat and this one has it all! I’ve added the holy trinity of sauces – ketchup, mustard and Worcester – to the beef patty for added depth of flavour.
For the burger:
1.2 lbs beef mince
1 tsp Dijon mustard
1 tsp Worcestershire sauce
2 cloves garlic, minced
1 tbsp ketchup
1 tsp thyme leaves, finely chopped
Sea salt and cracked black pepper
2 tbsp olive oil
Pickled red onion:
1 red onion, very thinly sliced
Juice of 2 lemons
For the spicy mayonnaise:
1/3 cup mayonnaise
1-2 tbsp hot sauce
To serve:
4 seeded buns
8 slices pancetta
2.6 oz gruyere cheese, sliced
1/2 cup rocket
Ketchup, optional
