Cacio E Pepe Crispy Air Fryer Chips

The trick is to toss the chips in the Parm as soon as they come out of the basket in order for the steam to soften the cheese to give it any chance to coat them.

Method

  1. 1. Preheat the airfryer to 170˚C/350˚F and cook the fries for 18 - 20 minutes. Slide out the basket halfway through cooking time and shake.
  2. 2. Meanwhile, in a microwave-safe bowl, melt the butter with the pepper and salt in 20-second intervals in the microwave until fully melted, stirring between each interval as needed.
  3. 3. Once the fries are cooked, place them in a large bowl and toss them with the melted butter. Add the cheeses and stir until combined. Serve with additional cheese and black pepper on top, as desired.

Ingredients

1 bag frozen skin-on fries

1/2 stick unsalted butter

½ tsp freshly ground black pepper, plus extra for garnishing

½ tsp salt

2.5oz  parmesan cheese, finely grated, plus extra for garnishing

2.5oz pecorino cheese, finely grated, plus extra for garnishing

½ tsp salt

75g  parmesan cheese, finely grated, plus extra for garnishing

75g pecorino cheese, finely grated, plus extra for garnishing
