Drunken Spaghetti | DonalSkehan.com, Pasta and and a glass of red is a marriage made in heaven. I've combined the two in one delicious dish for a midweek meal with maximum impact.

Drunken Spaghetti

If you thought you were the only one who responded well to wine then think again! Spaghetti soaks up the full-bodied flavours resulting in a rich and aromatic pasta sauce.

Method

  1. 1. Add the garlic to a dry pot before adding the oil and turning on the heat to low. You want to infuse the oil and make sure to not burn the garlic.
  2. 2. Add the spaghetti to a medium pot of boiling salted water and cook until it's almost al dente.
  3. 3. Add the chilli flakes and half the oregano to the garlic oil and stir through.
  4. 4. Add the red wine to the oil and stir through.
  5. 5. Drain the pasta, save some of the pasta water, and add to the red wine sauce. Give it an occasional stir so the pasta doesn't stick to the bottom of the pot.
  6. 6. Let the pasta soak up the wine, you'll notice the pasta changing colour to dark red.
  7. 7. Add the butter, parsley, sea salt and the last of the oregano and mix through.
  8. TOP TIP

    If you need to loosen the sauce, add a few tbsp of the pasta water and mix through.
  9. 9. Serve it up on plates and enjoy right away.
