Everything Spiced Savoury Cheese Scones

This recipe is worth saving and can be adapted with any herbs or spices you have to hand.  If you can’t get your hands on the Everything spice mix ready made, then you can make your own. Mix 1 ½ tablespoons poppy seeds with 2 tablespoons white sesame seeds, 1 tablespoon black sesame seeds, a good grinding of garlic salt and a pinch of onion powder.

Method

  1. 1. Heat the oven to 210°C/190°C fan/450°F/Gas Mark 8.
  2. 2. Put the flour and baking powder in a bowl and rub together with your fingertips until it resembles breadcrumbs. Add 2 tbsp of the everything bagel seasoning (check out the column to find out how to make your own if you can't buy it), the cheese and the buttermilk.Cut into the flour mixture with a flat bladed knife until it starts to come together.
  3. 3. Tip onto a clean worktop and knead briefly with your hands. Pat the dough out so that it is 4cm thick and cut out rounds with a scone cutter. Re-roll the trimmings to use up all the dough.
  4. 4. Transfer the scones onto a baking sheet dusted with flour. Brush with milk and press the rest of the bagel seasoning over the top of the scones. Bake in the oven for 10-12 minutes until puffed up and starting to split.
  5. 5. Transfer to a wire rack to cool to room temperature.
  6. 6. Serve with little bowls of cream cheese, capers, herbs and folds of smoked salmon for people to build their own savoury feast.
