Smoked Salmon Bagels

A sesame bagel, salmon roe, labneh and dill will make Irish smoked salmon sing.

Method

  1. 1. To make the labneh, mix together the yoghurt and salt in a bowl until well combined then place a piece of muslin over a fine meshed sieve and place the yoghurt into the muslin. Bring the edges of the muslin across the top of the yoghurt and then place the sieve over a large bowl and place the whole thing into the fridge overnight.
  2. 2. The next day, remove the labneh from the muslin and transfer to a bowl. The labneh should have thickened considerably and released moisture overnight.
  3. 3. Mix the lemon zest through the labneh.
  4. 4. To serve, slice your bagels in half and lightly toast.
  5. 5. Serve with the labneh to smear on the bagels and top with the smoked salmon, roe, some freshly black pepper, lemon wedges and dill.

15oz Greek yoghurt

1 tsp salt

1 lemon, zest of plus lemon wedges to serve

7oz smoked salmon

1.5oz salmon roe

4 sesame bagels

Handful dill, leaves picked

Freshly ground black pepper

450g Greek yoghurt

1 tsp salt

200g smoked salmon

50g salmon roe

4 sesame bagels

Handful dill, leaves picked

Freshly ground black pepper
