S’mores Pie

Most Americans will know all about that campfire classic – the mighty s’more – from their childhood. It’s basically toasted marshmallows sandwiched with milk chocolate between crunchy graham crackers – I can see why it’s popular! Here’s Brandi Milloy’s take on this childhood treat in one giant pie!

Method

  1. 1. Place cookies and crackers into a food processor and process until crumbs. Add butter and blend until well combined.
  2. 2. Pour mixture into 23 cm/9 " round pie dish, pressing onto the bottom and up the sides evenly.
  3. 3. Carefully pour marshmallow creme fluff into the pie dish and then broil for a couple minutes or until the top is toasted and lightly golden brown. Remove from the oven and set aside.
  4. 4. Heat heavy cream in a saucepan until small bubbles form. Place the chocolate chips into a bowl and pour the hot cream over the chocolate. Whisk until smooth and the chocolate is completely melted. Allow to cool slightly. Pour into pie crust and refrigerate for at least 4 hours to set.
  5. 5. An hour before serving, top pie with mini and large marshmallows and broil for a couple minutes or until marshmallows are toasted and lightly golden brown. Return pie back to the refrigerator for an hour to let the chocolate ganache filling set and then decorate with finished s'mores if you really want to go for it before serving. Enjoy!

14 graham cracker squares

1/4 cup unsalted butter, melted

1 heaped cup marshmallow creme fluff

1 3/4 cups milk chocolate chips

3/4 cup heavy cream

For garnish:

Mini marshmallows

Large marshmallows

Individual s’mores (optional)
