<p>I was back in the <a href="http://www.tv4.se/mitt-k%C3%B6k/klipp" target="_blank">Mitt Kök</a> kitchen again this week and this time, I wanted to share one of my favourite recipes that I use again and again. A good &#8216;go to&#8217; recipe, is one that is quick to prepare, uses fresh ingredients and of course is something that everybody will love! For me that means a roast chicken. This recipe is a brilliant one tray wonder because all you have to do is toss your veg in alongside the chicken, pop it in the oven and job done! This is a delicious, comforting dish and if you&#8217;re lucky you will have some mighty fine leftovers for the week!</p>

<p>Last weekend my cousin Emma got married in Brooklodge, Co. Wicklow, now if you are a regular subscriber to Delicious magazine you might recognise her as one of the people I was teaching how to cook a roast chicken a couple of months ago.  Emma is my eldest cousin on my mom&#8217;s side of the family and up until my little brother arrived on the scene we were the only little people around, therefore lots of attention, presents you know the deal.  Earlier this year before all the marriage madness took over I roped her in to a photoshoot for my Delicious magazine column, and after promising there would be dinner, she reluctantly agreed.</p>

<p>As you can imagine there was a lot of laughter when we finally got to the photographs, causing utter frustration for Sofie as she tried to take pictures as we buttered the chickens behind!  There was however complete silence after all the photos were taken and we finally sat down to eat dinner.  Roast chicken tends to have that effect!  Emma and her new husband (and sherpa) Stuart are currently winging their way to South East Asia on their honeymoon so a massive CONGRATULATIONS TO MR. AND MRS. JONES! Now time for a recipe&#8230;</p>

<p>In my opinion, homecooking starts and finishes with a really good roast chicken recipe.  It&#8217;s the type of food I was brought up on and every Sunday we had a roast chicken religiously and without fail!  The bones were used for stock and the leftovers (if there were any!) would be made into sandwiches for school.  The accompaniments are really what make a good roast dinner and if you are looking for a nice alternative to the traditional roast spuds you won&#8217;t go wrong with the combination of baby potatoes, asparagus, lemon, thyme and white wine, which all work wonderfully together in this recipe.  Best of all it makes a fantastic one tray dish which you can pop in the oven to cook up while you get on with other things!</p>

<p>January really is one of those months that my appetite doesn&#8217;t know what it wants.  One half of me wants something warm and comforting to hold off the the cold weather and the other half has had it up to here with rich stodgy winter food.  So trying to find the balance between the two is often difficult.  My solution has been to stick with the winter foods for now, but generally teaming them up with a light side salad, bulghur wheat packed with fresh flavours and spiky lemon dressings, which is so far working pretty well as a compromise.  This is all fine for now but I am so ready for some new foodie inspiration and thankfully spring is just around the corner, so things are most definitely looking up!  In fact we are busy getting the garden ready to plant some vegetables for year 3 of my kitchen garden project.  This year will by my year- I&#8217;m telling ya!  No spinach going to seed, no dead as a dodo carrots, no this year it&#8217;s going to be all change&#8230; I hope!</p>

<p>Speaking of new foodie inspiration, I haven&#8217;t mentioned that we are heading over to New York City in February, for a little break and a chance to soak up some culture!  We have two Irish friends living in Brooklyn so I&#8217;ve been promised a meal at one of the most authentic Brooklyn eateries when we go over.  It&#8217;s all very exciting, I haven&#8217;t been since I was a kid and S hasn&#8217;t been EVER so it&#8217;s going to be a very full couple of days, with me being dragged to see all the sights and of course her being dragged through every food market and kitchen shop I can get my hands on!  We have Dean and Delucca, Zabars, and Whole Foods on the list but if you have any must visit New York foodie spots do let me know in the comments section below.</p>

<p>Now back to the food, like I said it&#8217;s been a bit of a compromise, but this roast chicken with lemon and oregano kept us going for a few days this week.  Roast dinner the other day, followed by an aromatic chicken noodle soup the day after and then a chicken stir fry today!  I know it may sound boring but I think if you can cook a good roast chicken you are at the starting block to cook just about anything your confidence will allow! <img src="https://s.w.org/images/core/emoji/15.0.3/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>
