Home Cook Christmas Special Recipes!
December 19
Christmas is about to get a whole lot cosier, with the final and Christmas special episode of my latest TV series, Home Cook, airing on RTE One this Friday, 22nd December at 6.30pm. Warming spices, sticky plum glazes, crackling fires, mulled apple juice and sweet maple sauce are just some of the flavours from the episode that will help you get in the festive mood. I’ve got a collection of seasonal recipes that are ideal for sharing, feasting, gifting and of course, wowing. Roll up your sleeves, turn up the heat and lets get cooking!

Sticky Whiskey & Plum Glazed Ham
If you don’t have a pot big enough for the whole ham then you can do this in the oven – just line a large roasting tin with foil and a wire rack and place the ham on top. Put the aromatics and cider under the ham and cover with a large tent of foil. Bring to the boil over a hob then transfer to a low oven (120˚C/100˚C fan/250˚F/Gas Mark ½) and roast overnight for about 12 hours. Keep the juices to make ham soup later in the Christmas period!
This recipe has an Italian twist on your typical roast dinner side dish, with the prosciutto adding that perfect salty bite and the bundles adding that extra bit of something for your Christmas day spread.
Roast Onion, Chedder & Thyme Yorkshire Puddings
A cheesy twist on a classic favourite, these golden puffs are the perfect sidekick to any roast dinner. If you’re making ahead and chilling the batter overnight, make sure you bring it up to room temperature before you cook it and stir it well.
A symphony of textures and flavours, this is the perfect side for your festive spread. You can buy really nifty julienne peelers that make this a doddle without the need of a mandolin or crazy knife skill!
Spiced Pear Sticky Toffee Cake with Rum & Maple Drizzle
Wait for your kitchen to fill with irresistible aromas whilst you bake this cake for your festive spread. If you like a darker flavour to your sticky toffee, use dark muscovado sugar for an extra richness.
Glazed Sticky Spiced Festive Loaves
You can divide the roll of dough here into 4 and make 4 smaller loaves for the perfect festive gift! These will keep for 2-3 days if you warm through before serving or you can freeze them.
Perfect for gifting or for festive get-togethers, this aromatic blend of cinnamon, star anise, cloves, and more creates a syrup that is just delicious. Just add a splash to your favourite cider or apple juice, throw in some lemon slices, heat it up, and let the warmth of the season embrace you.
