Get Paddy’s Day Ready With These 10 Dishes!

Whatever your plans may be this year for St. Patrick’s Day, food is always at the centre of my celebrations and deciding what to make often informs our plans for the day. Traditional Irish food like stews, breads & boxty are standard fare this time of year. Here I have 10 recipes to help you celebrate our national day!
Full Irish Breakfast Blaa
The full Irish breakfast is up there with Irish stew, colcannon and barmbrack and rightly so. We have some of the best sausage and rasher producers in the world so why shouldn’t we find joy in them sandwiched together in a light floury bap with a squidge of ketchup. This breakfast blaa is messy business but an instantly memorable breakfast.

Boxty Irish Potato Pancakes
Boxty potato pancakes are a traditional Irish recipe and they come with a great little rhyme that we were taught growing up: ‘Boxty on the griddle, boxty on the pan, if you can’t bake boxty, sure you’ll never get a man.’. The traditional recipe varies from region to region, but they all use grated raw potato. This is the version that my family makes and they are great with a full Irish breakfast.

A starter or light supper dish that puts a modern twist on the traditional combination of boxty, black pudding and eggs. The eggs can be prepared well in advance and just deep-fried at the last minute.

Angie’s Irish Stew
Angie looked after my Dad when he was growing up, and when I first started going to school, she used to walk me home and give me lunch which was regularly Irish stew. Her Irish stew is legendary in the Skehan family, with my Dad’s five siblings and my eleven cousins all having been brought up on it. Angie always knew how to feed an army of hungry mouths, so I hope this version of her recipe does it justice!

Dublin Coddle with Pearl Barley
Traditional Irish food is all about comfort and now proves this more than Dublin coddle. Purists will have to excuse the frying of the sausages, but I’m sorry I can’t bear a nude sausage sitting in my coddle. Do seek the best butchers sausages and streaky bacon you can get your hands on, for a simple dish like this one it makes all the difference.

Crispy Spice Bag Chicken Buns
Outside Ireland, most people won’t have a clue what a spice bag is, but those in the know will be well aware that this Chinese-Irish takeaway staple is fast becoming a favourite. Crisp, fried chicken tossed in a sweet spice mixture with chips and fried onions and peppers, all served in a paper bag and devoured – hook it to my veins!

Chocolate Guinness Cake
If you are a fan of decadent treats, this Chocolate Guinness Cake is the dessert for you! The dense and fudgy sponge has an intense malty flavour which comes from the addition of the stout and is topped with a creamy, white chocolate, cream cheese frosting which some say helps the finished cake resemble a pint of Guinness!
