Should deception be considered when it comes to cooking the family dinner? With a 4 & 6 year old, I absolutely believe so and in fact, I wholeheartedly endorse it. Hidden vegetables are everywhere in my cooking these days, kale in berry laden smoothies, spinach finely chopped and stirred through their favourite soup and even some of their favourite meat filled dishes sold on the name alone yet made with a veggie alternative. In the name of mixing things up, this week I have three family friendly winners which all fit the bill when it comes to veg forward feasts the whole family will crave and you can stick on regular repeat.

Roast Vegetable Fajitas with Homemade Tortillas, Fiery Salsa & Pickled Cabbage

“Who feels like Fajitas tonight!” maybe a song twisted and borrowed from a well known ad from the 90’s but my kids are none the wiser that chicken ever featured in this family feast that always goes down a storm with our two. Roast any root veggies you fancy and toss them in spice and roast till sweet and caramelised then serve straight to the table with some shop bought or homemade tortillas, a fiery or mild salsa & some quick pickled cabbage for the gut. An assembly job supper that feels like you’ve gone to lots of effort!

Crispy Cauliflower Kung Pao

Next up, Crispy Cauliflower Kung Pao, which makes use of the air fryer to give you crispy cauliflower florets which are tossed in a sweet and spicy sauce and served with brown rice. You can of course make the crispy cauliflower in the oven on a baking sheet but as a recent air frying convert, the convenience and efficiency of having a mini oven on my work top can’t be beaten. Add some steamed greens or maybe some mushrooms if you want to bulk it out but the sauce alone will be reason enough to make this one again.

Thai Style Roast Sweet Potatoes

Lastly a quick fix in front of the TV style snack that could of course also feature on the dinner table as part of a larger offering but these Thai Style Roast Sweet Potatoes are addictively delicious. The secret to truly crispy sweet potatoes is to toss the sliced sweet potato in a little cornflour, two to three teaspoons will suffice, you could also use fine semolina in the mix. Once dusted in this mix before roasting, it should yield perfectly crispy chips which can then be dipped in a zesty, spicy, Thai style dressing and adorned with crushed peanuts & coriander.
