I have three essential bakes which are ideal bakes for any events you might be organising or meals you are attending. They can be made the night before and can be sliced and served on mass! Either way, cut these recipes out and save them, they are staples in our baking capsule collection and get used all the time.

Gluten Free Chocolate Brownies

First up, a recipe for Gluten Free Chocolate Brownies. There is a continuous and growing demand for gluten free recipes with recent estimates showing that 1 in 100 Irish people are intolerant to wheat.  It can often be difficult to replace flour in baking recipes but these brownies, which rely on a dense and rich interior, use ground almonds to bind, making them gluten free. The batter can also be used to make a cake in a 20cm spring form baking tin.

Raspberry Cheesecake Squares

For a slightly different cake sale offering, try these Raspberry Cheesecake Squares. They are a no-bake bar which are incredibly easy to make. With minimal fuss, they combine raspberries and white chocolate for a riff on a timeless recipe that always impresses. You can make the same recipe using blueberries and if you choose to make this a showstopper dessert, I would suggest serving with a berry coulis to pour over just before serving.

Cinnamon & Coffee Crumble Cake

Cinnamon & Coffee Crumble Cake in slice form is my latest baking triumph. It’s a simple batter which is spiked with a spiced crunchy pecan filling and a crumbly sweet topping. The batter has natural yoghurt mixed through resulting in a wonderfully moist cake making the ideal vehicle for the sweet crumbly swirls it holds. Serve just as it is with a freshly brewed French press of coffee and if you feel indulgent, add a dollop of loosely whipped cream.
