The true chilly weather of winter has finally arrived and with it our kitchen has been on soup and stew overdrive. There’s very few winter woes that can’t be solved with a warm bowl of something nourishing. The routine of chopping vegetables and stirring pots has become a daily winter ritual. We’ve stocked up on ingredients like root vegetables and herbs, creating a rotation of go-to recipes that are both hearty and practical. The convenience of a warm bowl of soup on a cold evening is unmatched, providing a quick and satisfying meal that keeps us fueled through the winter hustle.

I have three hearty soup recipes that have eatin’ and drinkin’ in them and should keep you sustained throughout the dark days of winter.

Thai Rice Soup

The first a brothy Thai inspired rice soup. The base of this recipe begins with a surprisingly rich broth that emerges, derived from just a single chicken carcass, ideal after a Sunday roast. The secret lies in the infusion of aromatic ingredients such as lemongrass, ginger, and coriander. As the soup bubbles away, the kitchen fills with the most incredible aroma and results in a comforting and nourishing bowl.

Winter  Vegetable & Meatball Stew

In the heart of mid-winter, a soup that seamlessly doubles as a stew comes in extremely handy. Packed with seasonal vegetables and sausage meatballs spiked with fennel seeds, it embodies the essence of hearty comfort food. A bowl of this after a bracing winter walk is the dreamy sustenance you crave. Elevate the experience by serving with toasted sourdough slices, rubbed with garlic, and generously drizzled with your finest extra virgin olive oil. This uncomplicated yet satisfying combination transforms a simple meal into a cosy lunch or supper.

Tomato Hoop Soup

Lastly, a bowl of pure 90’s nostalgia, this tomato hoop soup with grilled cheese croutons might be the after school or work treat, your January is calling for. If you craved those tins of spaghetti hoops growing up this is the soup that will make that acceptable as an adult! A simple creamy tomato soup which is rich and sweet served with the crispy perfection of grilled cheese croutons will be a new favourite for kids and grownups too.
