New Year, Fresh Start!

I love a fresh start. Controversially, the first moment all the Christmas festivities are out of the way, the first thing to go in our house is the Christmas tree. I am more than happy to start the pile of trees at the collection point and strip down the decorations. It brings me great joy to jump on the new year, new you band wagon and you will no doubt see me juicing, making smoothies, salad boxes and whatever fad comes my way this month. I am happy to have something to cling to during these dark winter months. After all the cheese, meat, booze and indulgence throughout December most of us will be more than ready to start over and January is the perfect month for it. Out with the old and in with the new and with that in mind these three fresh, bright and colourful dishes will up your vegetable intake and get life back on track.
Super Green Spinach, Pea & Mint Soup
Around this time of year, my food blender gets a good workout and sits proudly on the countertop for soup season. I do like an immersion stick blender but get a bit more satisfaction and comfort that I get super velvety results when you use the jug variety. If you fancy pulling yours out from the back of the store cupboard the Super Green Spinach, Pea & Mint Soup here makes a silky smooth electric greens soup. It’s a simple lunch time option or make it fancy and serve with some cubed honey roasted celeriac and a swirl of cream.

One Pan Pasta Soup
Somewhere between a soup and a light stew lies my recipe for a One Pan Pasta Soup may not be as virtuous as the spinach laden one suggested above, though baby leaf spinach would be a lovely addition. It makes the most of pantry ingredients like tinned tomatoes and chickpeas and short pasta shapes like macaroni or orecchiette which can be used to bulk out soup like this one. Again make it as bog standard as you like or up the levels of bougie with elements like a glug of extra virgin olive oil as you serve, shavings of your best Parm and perhaps the best tinned toms you can get your hands on. Either way our two boys, 4 & 6, devour this one every time.

Winter Greens Sesame Slaw Salad
My last offering is a Winter Greens Sesame Slaw Salad which is bound by an addictive spiced peanut butter dressing which will be the pay off for anyone who isn’t a fan of getting their five a day. For those who are, it’s a bonus amongst a bevy of crunchy slaw ingredients like edamame, shaved cabbage and carrot alongside some roughly pounded peanuts for salty texture.
