Between running them to activities, playdates, and trying to keep some semblance of sanity, the last thing you need is a long, complicated dinner recipe. This week, I’ve got you covered with quick, no-fuss meals that are big on flavour and short on prep—because, let’s face it, you’ve got better things to do than wrestle with a 27-ingredient recipe on a Tuesday night.

Farmhouse Vegetable Soup

First up, let’s ease into things with a simple, hearty soup and sometimes the classics are the best. Irish Farmhouse Vegetable Soup with Rosemary Croutons and updated take on one of my favourite after school soups when I was growing up. Fresh Irish veg, a bit of stock, and some patience will give you a rich, comforting soup that tastes like you’ve spent hours on it, when really, it’s the magic of a good simmer. The rosemary croutons are an easy add-on, but you can skip them if you’re in a real hurry—though they do add a delightful crunch that makes this soup feel a bit fancier than it actually is.
